Honeynut squash is a delicious and versatile winter squash that has become increasingly popular in recent years. This unique variety is actually an interspecific hybrid of butternut and buttercup squash, resulting in a smaller size and sweeter taste. When ripe, it turns from green to a deep orange and has a rich, sweet flavor that is perfect for a variety of recipes.

One of the great things about honeynut squash is its versatility in the kitchen. Interestingly, the squash was actually developed by a Cornell University professor in the 1980s, but was not made available to the public until 2015. It wasn’t until another Cornell professor and plant breeder, Michael Mazourek, began developing a cultivar that it entered national markets. Chef Dan Barber of Blue Hill and Blue Hill at Stone Barns in New York also assisted in the development of this tasty squash.
